Yeah i get that those are munchkin designs....

what about a 50 ton with 2 ER PPC, 5-8-5 movement and 18 DHS tho?

If all it has are the two ERPPCs and a couple of secondaries, then no, the idea of building a mech that has two main guns and can fire them every turn is fine. Munchy starts when you give the mech the ability to fire everything and never pay for any heat build up. Plus your example is over sinked unless there are secondaries you didn't mention.

Flaws in a mech, be it designed in ones or how it ends up working out, give them character and set them apart from the other mechs out there.

The SCP-1O, now that one has all kinds of "character". A bad roll and the GM gave me one ...what a pain in the keister, but in campaign it forced you to hold your fire until you were sure of hitting, then find cover to cool off which also functioned to preserve your armor. Wait, hit & fade...Being allowed hull-down rules helps. I wanted to salvage a PPC or autocannon...but NO HANDS. Those Lancemates that didn't take cover...Bogarts with the salvage, man! I hated that Scorpion, but now it holds some odd bit of charm.
