This is just something I have been wondering, maybe someone out here has the board.
What is the logical reason that I cannot take a leg from one mech (say an LCT-1E) and put it on another mech of the same type but different model (LCT-1V say)?

Cheese is the reason. Crusader legs for instance, some have JJ's. others have SRMs etc. What if I remove the legs of a variant with extra armour spread all over, and replace them with the JJ variant? That means an overweight 'mech.
LCT-1V, 1M and 1S are also differently armoured, and so on.

also, for variants that don't have differences like that, each leg probably has muscles programmed in a slightly different way to acocund for different amounts of weight in each upper body section, etc.

Yeah, I bet a mech with an AC20 in the left arm needs some extra weight or gyros in the right leg to keep it balanced.
